Process Overview — Falling-Film Multi-Effect under Vacuum
  1. Feed & Preheat: Clarified juice is preheated via condensate to reduce steam usage.
  2. Effect 1 → Effect 2 → Effect 3: Live steam heats the 1st effect; its vapor heats the next, with progressively lower pressure and temperature.
  3. Brix Control: Inline refractometer governs discharge vs. recycle to hit target °Brix.
  4. Aroma Recovery (optional): Stripped volatiles condensed and dosed back into concentrate.
  5. Utilities: Final vapor condenses in surface condenser; clean condensate recovered; non-condensables removed by vacuum pump.
